if you have access to a Trader Joe’s & are looking for a simple & easy dinner- this is for you
i n g r e d i e n t s (serves 3)
1 bag frozen shrimp (has 20-30)
1 box chickpea & red lentil risoni
2 precut veggie packages (asparagus, mushroom, onion)
lemon
evoo
seasonings: @traderjoes mushroom umami, garlic, salt&pep
d i r e c t i o n s
1 defrost shrimp
2 lay veggies on baking sheet, toss in EVOO & all seasonings
3 bake at 400 for 15 min
4 while veggies cooking: follow risoni box instructions, cut up lemon slices, & prepare shrimp by tossing in EVOO & seasonings
5 take out veggies at 15 min, place lemon slices & shrimp on top of veggies, & put back in for 5 ish min
6 option to broil a few mins as well
